BBQ pizza. Never had it?
Ok… serious note. I recognize that BBQ pizza is a novelty, but why is it universally accepted as chicken with a jar quality tomato based sauce and mozzarella? Chicken ain’t primary BBQ meat, and mozzarella has no place in this thing.

A REAL BBQ pizza would be smoked pulled pork, collard greens and Mac and cheese. Maybe toss some sweet pickles or jalapeños in there.

I’m also thinking of a “deep dish” version that’s basically a Brunswick stew pot pie….
May be some experimenting in my future…

I’m thinking the “pizza” portion covers the mozzie being there.

Now, let’s also be clear about one thing. When you are comparing “styles” of BBQ it should be the best example of that style.

Recently Southern Living Magazine rated Southern Soul BBQ on St Simons Island the best BBQ joint in the state and maybe the best in the south. That could be hotly debated but it’s a good representative of a traditional southern smoke house BBQ style. Likewise, if you are going to go with the Carolina vinegar style, find an example that fans of that style swear by. If you are in Texas or Kansas City, find a place that is the best representative of that style. Once you’ve done that, then you can identify, not the best, but your personal preference.

What going on is that the map is not entirely accurate. The Miami/south Florida hispanic community does tend to marinate pork butt in a sour orange "mojo" marinade overnight before slow cooking on the smoker. It is good stuff....but totally different from the smoked pork butts prepared in north Florida and the panhandle, which are in the style of south Georgia and LA.

Cubans like to cook the whole pig in the ground or in a china box overnight- very savory and tasty especially the crunchy skin, not much if any smoke flavor though

There used to be a dive on Six Flags Rd at Factory Shoals that people drove out from midtown to get there take out only fare. I can't remember the name. Twas good Georgia cue.
