Vinegar sauce was something I didn’t know about for the first half of my life. I suspect it is an acquired taste.

Yep, South Georgia BBQ always had a sweet red sauce.

Depends on where you live. Mustard based "carolina sauce" is a big deal on this side of the state - i believe it's the western carolina sauce. For me, growing up it was always sweet "memphis sauce" or mustard based "carolina sauce". The east carolina vinegar sauce is certainly a little different - i always prefer the mustard based carolina sauce for pulled pork and the sweet and tangy memphis sauce for ribs and brisket.

In these parts you'll start a fight when you talk BBQ sauce...
