QUAntum leap belongs in this list. William Bell's TD at the Citrus Bowl.
"QUAntum leap"? Is that what it is called now? Pretty good. Yep, that's what it was all right. Mr Q has forever earned a place in the hearts of Georgia Tech fans with that one outrageously athletic play to win that game. Joining all of the aforementioned, great plays in Tech history which, to my mind, were all noteworthy. Impossible to pick one that is truly "iconic". Nope, can't do it.

It was referred to by lots of people as the "QUAntum leap" almost immediately after the play.

Oh wow, way too many in my lifetime.
1. Eddie Lee Ivery 97 yard kickoff return vs ND 1977
2. Malcom King 58 yard run to the 1 in the 1984 UGA game. Sanford Stadium got awfully quiet
3. Gary Lee 95 yard kick off return 1985
4. Jerry Mays the entire 1989 UGA game
5. William Bell TD run 1991 Citrus Bowl
6. Dez White touch down vs Virginia 1998
7. Kelly Cambell Jet fuel touch down UGA 1998
8. The Goose is lose 30 yard Triple Option Touch down UGA 2000
9. Kerry Watkins one hand Clemson 2000
10 Calvin Johnson period.
11. JD 88 yards vs Miss St. 2008
12 JD opening touch down 2008 UGA
13. Roddy Jones 50 yard TD 2008
14. Fake field goal Bey Bey TD Clemson 2009
15. Kick and Pick
16 Miracle on North Ave Miracle on Techwood.

I could go on.
Great thread!!! The "most" iconic play... just one. Wow. Impossible for me to come up with only one. There are quite a few very distinct ones and I'm partial to 1990. This list compiled by @Coloradojacket is outstanding.

1) Can I really give it to a play that was 'just' a Field Goal? ...many would argue field goals barely meet the threshold of a football play. ...but Sisson against UVA in 1990. That one is seared into my memory. The joy of watching that ball sail through and seeing the team celebrate was just awesome.
2) Again 1990 season... but Jan 1, 1991. William Bell's run and diving leap into the endzone against Nebraska... what a season!!
3) Another Jan 1st game...another National Championship year. Wrong-way Roy Riegels in 1929. Probably not iconic for Tech by any definition.. but certainly whacky and memorable.

Every play listed. But in my mind nothing, ever, was or will be as dramatic, as glorious, or as euphoric as Butker's 53-yarder against Georgia. Not in the history of GT football. Nothing. Ever. Dare I say I still get hot flashes thinking about it?

Not only that, but JeT's scramble to get us into range. Win probability chart was insane that game. I think Tech had a .19% chance to win when JT snapped the ball.
