Watching this NM vs Arizona game has me intrigued about the TO out of the gun.

They're not too many teams that run it either, why?

Just a couple of observations that I saw might answer your question. To me, the option (other the flip toss to offset back) develops very slowly compared with a true TO, second the depth of the QB and back means the O linemen have to hold their blocks longer and can't get to the second level cleanly. It was interesting watching it but it has the same problems that the read option or running out of a shotgun formation we've seen time and time again. Not surprising Davie incorporated a lot of option principles in his O, he was always a fan of PJ and Tech.
